Til Ki Gajak | Diabetic-Friendly Sesame Seed Sweet
Til ki gajak is a delicious traditional Indian sweet made from sesame seeds (til) and jaggery (a type of unrefined sugar). However, we made til ki gajak using Diabexy sugar (a sweet fiber) because jaggery has a high glycemic load, similar to white sugar. This means it can cause an increase in blood sugar levels.
Til ki gajak has a unique, crunchy texture and a good balance of sweetness and nuttiness. This sweet is very popular in the northern parts of India, especially in states like Uttar Pradesh, Madhya Pradesh, and Rajasthan.
Til ki gajak is often enjoyed during the winter months and festivals like Makar Sankranti. It is also enjoyed as a snack or dessert because it is a favorite among both kids and adults.
Here, we are sharing a til ki gajak recipe using low glycemic load ingredients, which is good for the overall health of everyone. This recipe is also best for people with diabetes because it doesn't increase blood sugar levels and can help to reduce them.
We use Diabexy sugar in this recipe because it's an excellent sugar substitute for those looking to control their blood sugar levels. Unlike most sugar substitutes that contain high EGL ingredients like Maltodextrin, maltose, dextrose, or sucrose, Diabexy sugar is made with fructooligosaccharide, which has an EGL of zero. This means it doesn't get absorbed in the intestine and gets flushed out without impacting blood sugar. This makes it a versatile and healthier choice for managing diabetes while enjoying sweet flavors.
