Pumpkin laddu is made from pumpkin and other ingredients like spices, sugar, and coconut, so that’s why it is called pumpkin laddu. Pumpkin laddu is a delightful and nutritious sweet that combines pumpkin's sweetness and vibrant color.

Here, we share a Sugar-free laddu recipe made from pumpkin and diabexy atta with other wholesome ingredients. This sweet pumpkin recipe is perfect for health-conscious persons and people with diabetes. We used low glycemic load ingredients and Diabexy sugar, a type of sweet fiber, to make these sugar-free laddus. This combination does not impact your blood sugar levels and helps to maintain them.

Sugar Free Pumpkin Laddu Ingredients

  • 250g Yellow pumpkin: Also known as squash or pumpkin. It is a good source of vitamins A, C, and E which help to improve eye health, boost immunity, and many more.
  • 150g Paneer: It is rich in protein which helps muscle growth and repair.
  • 20g Dry Coconut: It adds rich and nutty flavor to the dish. It also has fiber, vitamins, and minerals.
  • 30g Diabexy Atta: Diabexy atta is made using low-EGL ingredients, and the EGL value is 7 instead of other types of atta with EGL values between 50 and 60. It is also made from nuts and seeds, giving it a high protein and fiber content. There is no side effect of this atta.
  • 30g Diabexy Sugar: Diabexy sugar contains fructooligosaccharide which has very low EGL ingredients.
  • 20g Ghee: Ghee adds flavor, richness, and depth to dishes.
  • 30g Dry Cranberry: It adds a sweet-tart flavor and chewy texture to the dish.
  • 5g Cardamom Powder: It adds a unique, aromatic flavor that enhances the taste of the dish.

How to Make Pumpkin Laddu

  • First, take 250g of pumpkin and grate it using a grater.

  • Then, take 30g of Diabexy atta in a pan and roast it on low flame.

  • Transfer the roasted atta to another bowl.

  • Next, add the grated pumpkin to the same pan.

  • Then, add Âľ tsp of ghee and mix it well.

  • Add 150g of grated paneer and mix it with the pumpkin.

  • Now, add the roasted Diabexy atta and 20g of grated coconut.

  • Then, add 30g of Diabexy sugar and combine it with the other ingredients.

  • Add 1 tsp of cardamom powder and 30g of unsweetened dry cranberries to the mixture.
