How to Make Spring Roll for Diabetics: Step-by-Step Guide
Take 200g Diabexy Atta in a bowl. Add salt as per taste. Add water gradually and knead into a soft dough. Let it rest for 10 minutes.
Heat 1 tbsp oil in a pan. Add 1 tbsp jeera and let it splutter. Add chopped onion, green chilli, and sauté until translucent. Add chopped cabbage and cook for 2-3 minutes.
Add ½ tbsp haldi powder, 2 tbsp chilli flakes, and salt to taste. Mix well. Add chopped coriander and cook for another minute. Turn off heat and let the filling cool.
Divide the dough into small balls. Roll each ball into a thin, round sheet (like a chapati).
Place a spoonful of filling on one side of the rolled sheet. Fold the sides inward, then roll tightly from the filling side to the end. Seal the edge with a little water.
Heat oil in a deep pan. Once hot, carefully add the spring rolls. Fry on medium heat until golden brown and crispy on all sides.
Remove from oil and drain on paper towels. Serve hot with tomato ketchup or green chutney.
Diabexy Atta has a low glycemic load of 7 (compared to 50-60 in regular flour), and this recipe uses no refined sugar. The high fiber from cabbage and onions helps slow down glucose absorption, making these spring rolls a healthy, diabetic-friendly snack.
