Sabji, also called "subzi" or "sabzi," is a vegetable dish that can be made with a particular vegetable or multiple vegetables as a mixed veg. Here, we make "lauki ki sabzi", which is very tasty with puri.
Puri sabzi is popular for Lunch and special occasions throughout India. Many people consider puri sabzi as traveling food and school lunches for their kids.
The main problem is puri and sabzi, which have high glycemic load ingredients. Most people use regular flour to make puri, which is not considered healthy for people with diabetes.

Puri ingredients
- 50g Diabexy Atta
- 2.5g AjwainÂ
- 2.5g Black cumin
- 5g Ghee
- NutroActive Mineral Salt (to taste)
Lauki ki Sabji ingredients
- 500g Lauki (bottle gourd)
- 150g Tomato, Chopped
- 5g Green chilli , Chopped
- 2g Curry leaves
- 5g Panch phoron
- 5g Haldi (turmeric) Powder
- 2.5g Chilli Powder
- 5g Dhaniya (coriander) Powder
- 5g Coriander leaves
- NutroActive Mineral Salt (to taste)
Making Puri Sabji: Step-by-Step Guide with Pictures
Lauki ki sabji:
- Take 500g of lauki and chop it into small pieces. Add ghee to a pressure cooker and heat it.
- Add 1 tsp of Panch phoron, 1 chopped green chili, and some curry leaves to the ghee.
- Add 150g of chopped tomatoes and sauté all the ingredients..
- Add NutroActive Mineral salt to taste and mix well.
- Add the chopped lauki, 1 tsp haldi powder, ½ tsp chili powder, and 1 tsp dhaniya powder.
- Mix all the ingredients properly and add 1 cup of water.
- Cook the mixture on a low flame for 10 minutes.
- Once cooked, garnish with chopped coriander leaves.

Poori:
- Take 50g of Diabexy atta in a bowl and add ½ tsp Black cumin, ½ tsp Ajwain, and 1 tsp ghee.
- Mix the ingredients and knead them into a dough. Let it rest for 5 minutes.
- Roll the dough into small circles to form pooris.
- Heat ghee in a kadai (deep frying pan) and fry the pooris until they are golden brown.
- Your poori is ready.
Serving:
Serve the hot pooris with the prepared lauki ki sabzi. You can also add pickles or chutneys to enhance the taste.
