Tacos have become a favourite in Indian homes, especially with kids and teenagers. Crunchy shell, spicy filling, a bit of mess while eating. The problem is what goes into most tacos: maida or corn tortillas, ready-made shells, and a pile of mayonnaise or sour cream on top. For anyone with diabetes, that is a fast spike on a plate.

So we made our own. This tacos recipe uses a homemade taco shell made from Diabexy Sugar Control Atta, stuffed with a simple, spicy paneer and cabbage filling. Each taco has an approximate glycemic load of just 1.38. It is quick, it is a proper tacos recipe at home with ingredients you already have, and the whole family can eat it together.

Why Most Tacos Are Not Diabetic Friendly

If you look at the top paneer tacos recipes online, almost all of them use store-bought tortillas or taco shells, and many add mayonnaise, garlic sauce, sour cream or barbecue sauce. The shells are usually maida or corn, both fast-digesting carbs, and the sauces add hidden sugar and fat.

Ingredients for Paneer Tacos

This vegetable tacos recipe uses everyday Indian kitchen ingredients. No taco seasoning packets, no special sauces.

How to Make Paneer Tacos: Step by Step

Making the Taco Dough

Step 1: Take the atta in a bowl

Add 100 grams of Diabexy Sugar Control Atta to a mixing bowl.

Step 2: Add oil and salt

Add one teaspoon of oil and half a teaspoon of salt. Rub them into the atta with your fingers so the oil spreads evenly. This little bit of oil is what makes the shell crisp later.

Step 3: Knead the dough

Add water a little at a time and knead into a smooth, firm dough. Keep it slightly firmer than roti dough so the shells hold their shape. Cover and keep aside while you make the filling.

Making the Paneer Filling

Step 4: Sauté the onion

Heat a little oil in a pan and add one chopped onion. Cook until it turns soft and lightly golden.

Step 5: Add the cabbage

Add half a cup of chopped cabbage and stir fry for a couple of minutes. Keep it slightly crunchy, it gives the tacos a nice bite.

Step 6: Add paneer and spices

Add a quarter cup of paneer, half a teaspoon of red chilli powder and half a teaspoon of salt. Mix well and cook for a couple of minutes until everything comes together. Do not overcook the paneer or it turns rubbery.

Step 7: Finish with coriander

Switch off the heat and add a handful of chopped fresh coriander. Your paneer filling is ready.

Shaping and Cooking the Tacos

Step 8: Roll out the dough

Pinch off a small portion of the dough, roll it into a ball and roll it out into a thin circle, like a small roti. Thin is better here, because thin shells get crispier.

Step 9: Fill and fold

Place a spoonful of paneer filling on one half of the rolled dough and fold it over into a half-moon taco shape. Press the edges gently so it stays closed while cooking.

Step 10: Shallow fry both sides

Heat two tablespoons of oil in a pan and place the tacos in it. Cook both sides until golden and crisp, turning carefully with a spatula.

Step 11: Serve hot

Your paneer tacos are ready. Serve them hot with green chutney or a hung curd dip instead of mayonnaise. Each taco has an approximate glycemic load of just 1.38.

  • Swap the sauce: Mint chutney, a squeeze of lemon or hung curd with garlic gives the creamy feel without mayo.
  • Make it a meal: Two to three tacos with a side salad makes a complete, filling dinner.
