Odia Pheni is a delightful traditional dish from Odisha that is also known as "Pheni". It is typically savored during festivals or special events. The famous snack is loved by many for its delightful combination of sweetness and crunchiness.

It's one of the very famous sweets of Odisha. Pheni sweet is often enjoyed as a standalone dish or paired with cardamom, occasionally topped with nuts for added flavor.

There is an issue with Pheni sweet as it is typically made by using maida and refined sugar, which can have negative effects on our health. The EGL (Estimated Glycaemic Load) value of these ingredients is quite high, which can lead to an increase in your blood sugar level.

Here we are sharing a recipe of Pheni sweet that has a low EGL value and won't affect your sugar levels. For those who prioritize their health, this option allows you to enjoy delicious flavors without any guilt.

Odia Pheni recipe ingredients

  • 100g NutroActive Brown X atta – It has 25% carb in compared to normal or multigrain flour 70-80%. It contains 5g carb per chapati instead of 25-30g per normal chapati. It has high Protein & fiber. Ingredients of this atta are Oats, Soy Flour, Soy Protein, Lentils, Quinoa & more.
  • 1 tsp NutroActive Mineral salt – It is 100% natural and High-quality salt directly sourced from the Himalayas. This Mineral salt has 84 minerals in comparison to 2 minerals in normal salt.
  • 40g Desi ghee – It enhances the flavor and aroma of the dish. It contains healthy fats, vitamins, and antioxidants.
  • 2 Butter Pepper - Its non-stick, heat-resistant properties make for a different of cooking methods, from baking and wrapping to steaming.
  • 30g Coconut flour - It is gluten-free and has high fiber and healthy fats that improve overall health.
  • 30 Diabexy Sugar – It is a fiber that is sweet and being a fiber, it doesn’t affect blood sugar levels. Diabexy sugar contains fructooligosaccharide which has very low EGL ingredients.

How to make Odia Pheni Sweet

  1. First, Take 100g NutroActive Brown X atta in a bowl and add NutroActive Mineral salt, Then, add 1 tbsp of Desi ghee and some Lukewarm water.
  2. Mix all the ingredients and make a dough.
  3. Take small pieces of dough, place them between two butter papers, and roll them into round shape.
  4. Next, take 30g of coconut flour in a bowl and add 30g of Desi ghee and mix both the ingredients properly.
  5. Spread the mixture of coconut flour and desi ghee on the chapatis.
  6. Layer the chapatis by placing one on top of another, and applying the mixture between each layer.
  7. Make a roll of multiple rotis and cut it into small pieces. Then, roll out of small pieces.
  8. To make sugar syrup, Add 30g of Diabexy sugar into boiling water.
  9. Deep fry the small pieces in ghee. Keep it on a low flame and fry it till it is crisp.
  10. Spread sugar syrup on the crisp pieces.
  11. Our Crispy Odia Pheni is ready.

    EGL is 1.8 per Pheni, which is very low compared to other Pheni. It is the best choice for those who want to enjoy Pheni without compromising their health.
